Knowing the difference matters if you want to choose the best quality olive oil for your home. Here we explain it in a clear and simple way, so you know exactly what you’re buying and eating.

Extra Virgin Olive Oil: the highest quality

Extra virgin olive oil (EVOO) is considered the top category. It is made exclusively using mechanical processes (no chemical treatments) and must meet strict quality standards.

Main features:

  • Acidity below 0.8% (a key quality indicator)
  • No sensory defects: the flavour must be fresh, balanced, and clean
  • Rich in fruity aromas such as apple, almond, green grass
  • Best used raw: for salads, toast, grilled vegetables, etc.

Virgin Olive Oil: good, but with slight differences

Virgin olive oil is also natural and unrefined, obtained by mechanical extraction. However, it may have minor flaws in taste or aroma.

  • Still healthy and suitable for consumption, but lower in quality than EVOO
